“My mother has her own secrets when it comes to Hijazi food. One of those secrets is how to make the perfect puff sambosa. My mother used to say: “To make the perfect sambosa, you need to make perfect dough.” She would mix the egg with cold water, and then rub them into the flour while kneading them to get fluffy light puff. While frying the sambosa, she would put oil in a deep pan on medium heat, put the sambousa in the pan, and she would pour hot oil on the sambousa without turning it until it swells a little and becomes fluffy, crispy and golden.
