For the chicken
2 chicken breasts
2 tbsp Goody Smoked BBQ Sauce
1 tbsp Goody Garlic Sriracha Mayonnaise
1 tsp soy sauce
1 tsp honey
For the burgers
1 tbsp olive oil
2 Goody Pineapple Slices
2 burger buns, to serve
½ cup shredded lettuce
1 tomato, thinly sliced
½ red onion, thinly sliced
Goody Smoked BBQ Sauce, to serve
Preheat the oven to 180°C and put the chicken breasts between two pieces of cling film. Bash with a rolling pin until the breasts are 2.5cm-thick. Place onto a baking tray.
Whisk together the rest of the chicken ingredients and brush over the breasts. Place in the oven for 20 minutes.
Place a grill pan over a high heat. Pat the pineapple rings dry with kitchen paper and brush with olive oil. Place onto the grill pan and cook for 2-3 minutes per side, or until grill marks appear.
To assemble, halve the burger buns. Top the bottom with shredded lettuce, chicken breast, pineapple, tomato and red onion. Drizzle with BBQ sauce before adding the bun lids to serve.
