In a pan over medium fire, melt the butter and add corn and jalapeno. Continue stirring every now and then for 8 to 10 minutes until corn granules are slightly browned.
In a deep bowl, place the corn, then add mayonnaise, cheese, coriander, red pepper, and garlic and lemon juice and stir them together until they are incorporated well.
Place the salad in the serving dish and serve it immediately.
