- In a medium pot on high heat, heat the oil. Add the celery and onion and stir until softened, 5 minutes. Add the farro and cook, stirring, until the grains are coated and shiny, 30 seconds.
- Add the sieved tomato and the vegetable stock and mix. Add the white beans and bring to a boil. Simmer over low heat for 30 minutes
- Check seasoning and add salt and pepper if needed.
