Halloumi herb salad



For the dressing:

  • small bunch dill
  • small bunch parsley
  • 2 spring onions, root removed
  • ¼ cup grated parmesan
  • ¼ cup toasted pine seeds
  • ¼ cup Goody Lemon Mayonnaise

For the salad:

  • 250g halloumi, sliced into strips
  • 1 tbsp olive oil
  • 2 cups salad leaves
  • 2 small cucumbers, sliced
  • 1 avocado, sliced
  • 1 cup blanched green beans
  • 2 tbsp pine nuts, toasted
  • coriander, to serve


    1. For the dressing, place all the ingredients in a blender and blitz until smooth and bright green.
    2. For the salad, set a large frying pan over a medium-high heat. Brush the halloumi with olive oil and fry for 2 minutes per side, or until the halloumi is golden brown.
    3. To assemble the salad, spread half of the dressing over a serving plate and top with the salad leaves, cucumbers, avocado and green beans. Top with the halloumi, scatter over the pine nuts and coriander and drizzle with the remaining dressing before serving.
