Mango Salad with Peanut Dressing



Peanut Dressing:

  • 4/1 cup of Goody Natural Peanut Butter with No Added Sugar
  • 2 Tbsps Goody Natural Vinegar
  • 1 1/2 Tbsp Honey
  • 1 Tbsp Soy Sauce
  • 1 Tbsp Fresh Lemon Juice
  • 3 Tbsps Vegetable Oil
  • Salt and Black Pepper, to taste

Mango Salad:

  • 3 Large Mangoes, peeled and finely sliced lengthwise
  • 1 large Carrot, peeled and finely sliced
  • 1 Red Bell Pepper, finely sliced
  • 1/2 Red Onion, finely sliced
  • 1 cup of Coriander Leaves
  • 1/2 cup of Peanuts, roasted and coarsely ground
  • 1 Tbsp Green Onion, finely sliced


    • How to Prepare the Peanut Dressing:
      1. In a medium-sized bowl, put the peanut butter, vinegar, honey, soy sauce, lemon juice, and oil, and mix them well until incorporated; and then season with salt and black pepper.


    • How to Prepare the Mango Salad:
      2. In a large salad bowl, mix the mangoes, carrot, bell pepper, red onion and coriander leaves gently using a wooden spoon. Afterwards, garnish with peanuts, green onions, and a little bit of dressing. Place the remaining amount aside if desired.
