3 and 1/2 cups of ready cooked Goody farfelle pasta
1 cup Goody canned corn
1 cup Goody black beans
3/4 cup assorted sweet bell peppers, chopped
1 cup cherry tomatoes, halved
1/4 cup red onion, diced
1/4 cup packed cilantro, finely chopped
1 ripe avocado, pit removed and chopped
Optional: Fita or parmesan cheese
Dressing:
3 tbsps olive oil
3 tbsps rice vinegar
5tbsps squeezed fresh lime juice
1 tsp white sugar
1/4 tsp garlic powder
1 tsp and 1/2 chili powder
1 tsp cumin
1/4 tsp cayenne pepper
1 tsp salt
Direction
Stir together the Goody pasta, corn, black beans, sweet peppers, cherry tomatoes, onion, and cilantro. Add avocado last (and only to what you are eating; don’t add to any salad you have planned for leftovers).
In a bowl, combine all of the dressing ingredients.Mix well. Pour the dressing over the pasta and vegetables. Stir to combine.
