Pumpkin and chickpea burgers with red onion salad

Ingredients

3 tbsp Olive oil
4 cups Pumpkin cubes
1/2 pcs White onion, diced
1 pcs Garlic, minced
1/2 cups Goody Chick Peas, drained
1/2 tsp Salt
1/2 tsp Ground cumin
1/2 tsp Smoked paprika
1 cups Breadcrumbs
Goody Spicy Chipotle Sauce, to serve
6 pcs Burger buns
1 pcs mall red onion, finely sliced
2 cups Rocket
1 tbsp Olive oil
1/2 tsp Sumac


    Direction

    • Preheat the oven to 180°C. Tip the pumpkin cubes onto a baking tray, drizzle with 1tbsp olive oil and roast for 25-30
      minutes, until cooked through.
    • “Set a frying pan with 1 tbsp olive oil over a medium heat. Add the onion and cook for 4-6 minutes, until softened and translucent. Add the garlic and cook for a further minute.
    • Tip into blender, then add the roasted pumpkin, chick peas, salt and spices. Pulse until just combined.
    • Transfer to a bowl and stir through the breadcrumbs. Shape into six patties and place in the fridge to chill for 15 minutes.
    • Set a frying pan with the remaining olive oil over a medium-high heat. Cook the patties for 5-6 minutes on each side, until golden brown.
    • For the salad, toss together the chopped onion, rocket, olive oil and sumac until well combined.
    • To serve, halve the burger buns and top with a pumpkin and chickpea patty, followed by the red onion salad, Goody Spicy Chipotle Sauce and
      burger lid.
