- Bring a pot of salted water to a gentle simmer. Cook the green beans for 3 minutes, until bright green. Remove using tongs and place into a bowl with iced water.
- Boil the potatoes for 12-15 minutes, until soft through when pierced with a knife.
- Drain and set aside.
- Boil the eggs in a pan of simmering water for 6-7 minutes, then immediately place in iced water bath to cool completely. Peel the eggs and half.
- On a large platter, arrange the green beans, new potatoes, halved eggs, salmon, baby gem leaves, cherry tomatoes, ren onion and olives. Sprinkle over the spring onion before serving
