Salmon Niçoise salad



  • 1 cup green beans, ends removed
  • 1½ cups new potatoes, quartered
  • 4 eggs
  • 2 x 97g cans Goody Salmon in Spring Water, drained
  • 2 heads baby gem lettuce
  • 1 cup cherry tomatoes, finely diced
  • ½ red onion, thinly sliced
  • ½ cup Goody Green Olives
  • 1 spring onion, thinly sliced


    1. Bring a pot of salted water to a gentle simmer. Cook the green beans for 3 minutes, until bright green. Remove using tongs and place into a bowl with iced water.
    2. Boil the potatoes for 12-15 minutes, until soft through when pierced with a knife.
    3. Drain and set aside.
    4. Boil the eggs in a pan of simmering water for 6-7 minutes, then immediately place in iced water bath to cool completely. Peel the eggs and half.
    5. On a large platter, arrange the green beans, new potatoes, halved eggs, salmon, baby gem leaves, cherry tomatoes, ren onion and olives. Sprinkle over the spring onion before serving
