Set the oven to 180 degrees. Oil the pan a little. Meanwhile cook the ground meat with onion at a medium temperature until it is done.
Add the green pepper, corn, taco spices, tomatoes and enchilada sauce. Let it boil before you put it aside.
Spread ¼ the amount of cooked meat over the pan. Cover it with a layer of tortilla. Add another layer of meat with 1/3 the amount of cheese. Repeat this layering process twice, starting with the tortilla and ending with cheese layer.
Put the pan in the oven for 30 minutes until the cheese melted and turned into dark brown.
Decorate each plate with sour cream and onion.
