Comfort food, no kitchen is completed without its recipe.
4 eggs, separated
½ cup butter
1 cup firmly packed light brown sugar
1 can Goody pineapple slices
10 maraschino cherries, halved
1 cup flour
1 tsp baking powder
¼ tsp salt
1 cup sugar
1 tbsp butter, melted
1 tsp almond essence
1.Melt first amount of butter. Pour in a medium cake pan. Add brown sugar to cover base. Arrange pineapple slices and sprinkle cherries cut side up.
2.In a large glass bowl, beat egg whites till soft peak forms. Gradually add sugar beating after each addition till stiff. In batches, use a rubber spatula to fold in flour and baking powder.
3.In a small bowl, use same mixer to beat egg yolks till light and thickened.
4.Fold egg yolks in egg whites mixture. Fold in melted butter and almond essence.
5.Pour batter over pineapples. Bake in moderate oven for 30- 35 minutes or till top springs when touched. Cool for 5- 10 minutes. Turn on serving plate.
