Ingredients

Sauce ingredients:

1 tomato, seeded and finely diced

1 small onion, sliced

1 large lemon, juiced and grated

Salt to taste

2 tbsp fresh cilantro

1 cup sour cream or labneh

1 cup orange cheddar

6 tortillas

Method

  1. Wash chicken and dry well. In a glass bowl, mix first 5 ingredients (starting with the Mexican seasoning, and finishing off with the hot sauce). Season the chicken with the mix, cover and leave for at least 1 hour to marinate.
  2. For the sauce: Mix the tomatoes, onions, lemon juice, zest and cilantro. Add salt to taste. Refrigerate until serving time.
  3. In a pan, heat 1 tbsp oil. Sauté onions, peppers and garlic until tender. Add the seasoning and salt. Set aside.
  4. In a separate pan or grill, heat 2 tbsps of the remaining oil, grill chicken on each side for 5 minutes. Take of heat and place on cutting board. Cut into strips and place in a serving dish along with the vegetables. Place sauce in another bowl. Place cheese and Labneh on the side. Serve with tortillas. Each person can choose the ingredients for his/her tortilla.
