Chicken Shrimps Oriental Rice
Tasty, oriental rice dish with Chicken & Shrimp. Great meal for your guests.
2 cups basmati rice, washed and soaked for ½ hour
200 grams chicken breasts, diced
200 grams fresh medium-sized shrimps, peeled and cleaned
4 tbsp vegetable oil
1 medium sized onion, thinly sliced
2 fresh bay leaves
1 tbsp ginger, grated
3 lemongrass leaves, tied together
2 calves garlic, chopped
1 large carrot, sliced lengthwise
3 medium sized cabbage leaves, thinly sliced lengthwise
1 can Goody Whole Kernel Golden Corn
3 tbsp coconut milk powder, dissolved in 1 cup water
1 hot pepper
1 tbsp Goody Hot Sauce
Fried onion for garnish
- In a large pan, heat the oil. Add the onions, bay leaves, galangal, ginger, lemongrass, and hot pepper. Stir fry until onions are yellow. Add the garlic and stir. Add the chicken and shrimps. Stir fry on high heat until all liquids evaporate. Add the carrots, cabbage, and corn. Stir well. Add the coconut and salt. Cover the pan and leave to boil on high heat until liquids evaporate. Add the hot sauce. In the meantime, boil the rice in salted water for 7 minutes. Drain water from rice.
- Add the rice to the chicken shrimp mix. Stir well and cover pan. Leave on low heat until all flavours and ingredients combine. Place rice in a serving dish, garnish with the fried onions and serve.
