Chickpeas Salad with Beetroot and Feta
1 ½ cups Beetroot, drained
2 cloves garlic, minced
1 medium red onion, sliced
1 ½ cups Goody canned chickpeas, drained
½ cup parsley, chopped
Juice of ½ lemon
Kosher salt and freshly ground black pepper
3 tbsps olive oil
¼ cup crumbled Feta cheese
- In a mixing bowl, combine the beets, garlic, chickpeas, red onion, parsley and lemon juice in a bowl. Season with salt and pepper, drizzle with the olive oil and toss to mix.
- Transfer the salad to a serving bowl, sprinkle with feta cheese, and serve.
