1.Beat the confectioners' sugar, peanut butter with dark chocolate, melted butter, vanilla extract and salt with an electric mixer until well combined. Roll rounded teaspoons of the mixture into round balls and place on a parchment-lined baking sheet.
2.Roll the chocolate peanut butter balls in the colored sprinkles. Place the truffles on a tray. Garnish the truffles by stroking the truffles with the chocolate spread.
3.Chill until firm, about 20 minutes.
