Coconut Carrot Balls

2 cups of Carrots, grated
3 Tbsps Sugar
1/3 cup of Water
2 cups of Tea Biscuits, ground
1 Velor Canned Cream Plain
1 cup of Coconut for covering the balls
- Place the carrots . sugar and water in a pot over low heat, stir well and leave them for 10 – 15 minutes; stirring every once in a while until their juice dries out and becomes thick. Take the pot off the heat, and leave it aside to cool.
- Add the ground biscuits and the Velor cream to the carrots; stir the mixture well until it forms a dough that can be easily shaped. Form medium-sized 2 cm diameter balls and cover them with the coconut, then place them on the serving dish and serve.
You can add a dash of cinnamon powder to the coconut.
