1 ¼ cups self-rising cornmeal
1 ¼ cups all-purpose flour
1 tsp salt
1 cup milk
2 large eggs, slightly beaten
¼ cup butter, melted
2 can Goody corn, drained
Vegetable oil, for frying
For the Sauce:
3 tbps Goody Mayonnaise
2 tbps Goody Ketchup
2 tbps dill, finely chopped
1.In a medium bowl, combine cornmeal, flour, and salt. In a small bowl, combine milk and eggs. Add milk mixture to cornmeal mixture, stirring well. Stir in butter and corn.
2.For the dressing: In a small bowl, add the mayonnaise, ketchup, and dill and mix until well combined.
3.Pour oil to a deep-fryer pan. Drop by tablespoons into hot oil. Cook 2 to 4 minutes, or until golden, turning once. Drain on paper towels. Serve with the sauce.
