Cream of Spinach and Broccoli Soup
Rich in flavour and nutritious. Worth each step.
2 tbsp butter
1 medium onion, finally chopped
2 batches spinach, chopped
4 cups chicken broth
3 cups cauliflower, small flowers
3 cups broccoli, small flowers
6 tbsp Velor powder milk
1½ cups water
1 cup cheddar cheese, grated
- In a pan, melt butter. Brown onion for 5 minutes or till softens. Add spinach, cook till liquid evaporates. Add chicken broth, cauliflower and broccoli. Boil, simmer for 20 minutes or till vegetable are cooked. Take off heat.
- In a food processor, put vegetables and some broth. Blend to smooth, add more broth if needed. Return to pan. Dissolve milk in water. Add with cheese to pan. Simmer without boiling. Season. If soup is too thick, add more broth. To serve, pour in small bowls garnished with cream and parsley.
