Prepare now the creamy fettuccine with dried tomatoes, sprinkle the top with parmesan cheese and red pepper flakes and serve hot.
1 pack of Goody Pasta Fettuccine
½ cup of Skimmed Yoghurt
¼ cup of Cooking Cream
4 Tbsps Olive Oil
5 Garlic Cloves, mashed
½ cup of Dried Tomatoes, cut into halves
1 can of Peeled Chopped Tomatoes
3 Tbsps Tomato Paste
½ Tbsp Coarse Sugar
Salt and Black Pepper to taste
1 ½ cup of Spinach, cut into medium pieces
1 Tbsp Parmesan Cheese, grated
Red Pepper Flakes, to taste
1.In a small bowl, mix the yoghurt and cream and put them aside.
2.Boil the fettuccine pasta according to the instructions on the package; drain and wash it with cold water, and set it aside. After boiling the pasta, set aside a cup of the water used in the boiling.
3.In a large pot over medium heat, place the olive oil, then add the garlic and dried tomatoes; stir for a couple of minutes. Lower the heat under the pot, then add the peeled chopped tomatoes, tomato paste, and sugar and stir them well.
4.Start adding a small amount of the milk and cream mixture; stir them rapidly in order for all the ingredients to be incorporated. Continue adding the mixture gradually; stirring constantly. After adding the mixture, raise the heat to medium and stir for about 5-7 minutes until it is incorporated and the mixture thickens.
5.Add the salt and black pepper to the mixture, then add the small spinach pieces and stir a little until they wilt. Add the fettuccine and stir well.
6.Pour in the serving dish and sprinkle the top with parmesan cheese and red pepper flakes, and serve hot.
If the mixture became very thick, you can add a small amount of the water used for boiling the pasta (Do not add the entire cup, start adding a little water and stir the mixture. You can add more water until the mixture has the appropriate thickness).
