Crispy Chicken Tenders with Goody BBQ Sauce

1 packet Panko breadcrumbs
Cooking oil spray
1 large egg
½ cup of all-purpose flour
¼ cup mayonnaise
2 tbs your preferred mustard
Salt and freshly cracked pepper to season batter
½ kilo chicken breasts cut into strips
Cooking oil spray
Chopped fresh parsley to garnish (if desired)
Goody BBQ Sauce


1.    Pre-heat oven to 200 degrees.
2.    Spread the Panko breadcrumbs evenly on a baking tray. Bake for 5 minutes or until the breadcrumbs appear crispy and golden in colour. Remove from oven and place aside.
3.    In a large mixing bowl add one large cracked egg, mayonnaise, mustard, flour and salt and pepper to season to your preferred taste. Combine ingredients to form a smooth batter. Place a baking (cooling) rack on top of a baking tray so that there is at least 1 cm space between the rack and tray.
4.    Add the sliced chicken in the batter mix and toss well so that the chicken is evenly coated.
5.    One by one, pick up each chicken slice with kitchen tongs and roll in the baked Panko crumbs. You may press some additional crumbs on the chicken so that it is well coated.
6.    Place each breaded chicken slice neatly side by side on the rack. From a distance lightly spray breaded chicken with oil. Bake for 15-20 minutes until chicken is cooked through. Remove from oven and garnish with fresh parsley.Serve with a ramekin filled with Goody BBQ Sauce. Dip those crispy chicken tenders into the sauce to your heart’s desire.
