1½ cups of flour
1½ sticks of butter (150g)
½ cup of powdered milk
¼ cup of powdered sugar
1 tsp of vanilla
½ tsp of cardamom
Date caramel ingredients:
½ stick of butter (50g)
1 cup of brown sugar
1 cup of whipped cream
½ cup of Goody Date Spread
1 cup of roasted and chopped cashews
1.Using a stand mixer, mix the butter, powdered sugar, egg and vanilla.
2.Add the powdered milk, the flour and the cardamom until the mixture turns into dough.
3.Make small dough balls, place them in the pie molds and press them against the sides of the molds.
4.Punch the dough using a fork or place cupcake liners inside the pies and fill them with something heavy, such as dried beans, to prevent the dough from inflating.
5.Refrigerate the pans for 45 minutes.
6.Bake the pans in the preheated over at 200°C or 400°F for 10 to 12 minutes.
7.Prepare the filling in a pot, by melting the butter and then adding the brown sugar. Stir for a minute, then add the date spread and cream and stir well at medium heat for 5 to 7 minutes.
8.Add chopped cashews to the date caramel and stir, let the mixture set and then put it inside the pie.
