Ingredients

1 can Goody Chickpeas, rinsed and drained
½ cup fresh parsley leaves, chopped
½ cup fresh cilantro leaves, chopped
½ cup white onion, chopped
3 cloves garlic, roughly chopped
1tsp ground cumin
½ tsp salt
½ tsp baking powder
2 tsp freshly squeezed lemon juice
3 tbsps olive oil
Goody Ranch Dressing for serving
 

Method

1.In a food processor, add the chickpeas, parsley, cilantro, onion, garlic, cumin, salt, baking powder and lemon juice. Process the mixture until the ingredients are minced but not pureed, scraping down the sides as needed. 
2.Preheat the oven to 180 degrees C. Grease the baking sheet with half of the olive oil.
3.Squeeze the falafel mixture into 4cm balls then flatten them slightly so they are the shape of patties. Arrange the falafel on the greased baking sheet and brush the tops of them with the remaining olive oil. 
4.Bake the falafel for 15 minutes, flip them once then bake them an additional 10 minutes until they are golden brown. 
5.Serve the baked falafel with Ranch dressing
