Egg and Corn Muffins

1 tbsp butter
2 tbsps Velor powder milk dissolved in 1/4 cup of water
2 tbsps flour
2 tsps baking powder
½ tsp salt
1 green onion, finely minced
Small can of Goody sweet corn
½ cup of salami, cut into small pieces
½ cup of yellow cheese, grated
¼ cup of yellow cheese, grated
- Grease every hole in the cupcake moulds with oil then sprinkle all the holes thoroughly with flour.
- Heat the oven at 160o
- In a deep bowl, mix the eggs with milk, flour, baking powder, salt, green onion, corn, salami and grated yellow cheese until the mixture is homogenous.
- Pour the mixture in the cupcake moulds then sprinkle the top with a little yellow cheese for garnish.Bake the moulds for 20 to 25 minutes or until the top browns.Remove the muffins from the moulds with the help of a knife when they are hot so as not to stick, serve hot.
