Ingredients

1 kilo sweet potatoes, peeled and roughly chopped

1 cup onion, chopped

5 garlic cloves, crushed

1 cup Goody Farfalle pasta, cooked

3 tablespoons dry chives

¾ cup olive oil 1 ½ liter water

Salt and pepper to taste

For sour cream:

½ cup heavy cream

2 tbsps vinegar

1 kilo sweet potatoes, peeled and roughly chopped

1 cup onion, chopped

5 garlic cloves, crushed

1 cup Goody Farfalle pasta, cooked

3 tablespoons dry chives

¾ cup olive oil 1 ½ liter water

Salt and pepper to taste

For sour cream:

½ cup heavy cream

2 tbsps vinegar

Method

1.Cook the pasta al dente as instructed
2.Mix sour cream ingredients and set aside.
3.Sauté onions in a deep pot with half of the olive oil until soft. Add potatoes, cook for 5 minutes, and then add ½1 liters of water. Cook over medium heat until potatoes are soft. Use a food processor or a blender to puree the soup. Return to fire and cook over low heat.
4.In a separate pan, heat up oil and cook crushed garlic over low heat until nice and golden. Do not use a spoon to mix the garlic, swirl around the pan instead.Add the pasta and toss around until coated with garlic oil.Mix pasta with soup.
5.Top off with a spoon of sour cream and an extra sprinkle of chives.
