3 tbsps extra-virgin olive oil
2 celery stalks, thinly sliced
1 medium onion, thinly sliced
1 cup farro
1 can Goody Sieved Tomato
3 cups vegetable stock
1 cup Goody White Beans, rinsed and drained
Salt and freshly ground black pepper
1.In a medium pot on high heat, heat the oil. Add the celery and onion and stir until softened, 5 minutes. Add the farro and cook, stirring, until the grains are coated and shiny, 30 seconds.
2.Add the sieved tomato and the vegetable stock and mix. Add the white beans and bring to a boil. Simmer over low heat for 30 minutes
3.Check seasoning and add salt and pepper if needed.
