A Ramadan must, but with repetition you might get board. Why not learn a new way to present it. Enjoy tradition with a twist.
1 can Goody fava beans medammes
1 small onion, finally chopped
1 tsp cumin
1 tsp powder coriander
2 tbsp olive oil
2 servings of Goody Napolitana pasta sauce
¼ cup warm water
1 cup yogurt
1 garlic clove, minced
Salt and pepper as desired
5 tbsp Velor powder milk dissolved in 1½ cup water.
3 tbsp butter, melted
1 cup all-purpose flour
Chopped spring onion and parsley for garnishing
1.In a pan, heat 1 spoon of olive oil. Brown onion, add beans and spices. Mix frequently. When heated through, mash some of the beans with the back of the spoon. Leave some whole. Take off fire, add second spoon of olive oil.
2.In a bowl, mix all crêpe ingredients with a whisk. Cook over hot greased pan, ¼ cup batter at a time till dry on top and golden at bottom. Turn to brown other side. Repeat till batter is done, cover cooked crêpes with damp towel.
3.In a small pan, mix pasta sauce with water till heated through. Pour in bottom of serving pan.
4.Fill each crêpe with 3 tbsp of beans mixture, roll and arrange in pan over sauce.
5.In a small bowl, mix yogurt with garlic and season. Pour over rolls and garnish with spring onions and parsley.
