2 hammour fish (one fish weighs about a kilo and a half)
1 tsp fish spices
Vegetable oil for frying
2 tbsps olive oil
3 garlic cloves, mashed
1 small onion, finely minced
Can of Goody tomatoes, peeled
2 cubes of Goody chicken bouillon
½  cup of Goody green olive slices
1 tsp oregano
1 tsp salt
1 tsp pepper
1 cup of small cherry tomatoes
A little minced green coriander for garnish


1.    Clean the fish then season with fish spices; fry in deep hot oil, turning on both sides, for 10 – 15 minutes until it is done, strain from the oil then place the fish in the serving dish.
2.    In a pan, put the olive oil on the fire then stir in the garlic and onion, stir well until they wilt.
3.    Add the peeled tomatoes over the garlic and onion, mash well.Add the chicken bouillon cubes, continue to stir until they are done then add the olive slices, oregano, salt and pepperCut the small cherry tomatoes in half, add them to the mixture over the fire, leave it for only 5 minutes then pour the sauce over the fish in the serving dish, garnish with coriander and serve hot.
