Fish Marinade
1 kg of Hammour Fillet, chopped into medium-sized pieces
½ tsp Curry
½ tsp Salt and Black Pepper
1 Tbsp Garlic, minced
1 tsp Goody Natural Sugar Cane Vinegar
1 tsp Goody Mustard
1 whole Egg, whisked
Flour to wrap the fish
½ cup of Sunflower oil
Curry Cream:
1 Tbsp Olive Oil
1 Tbsp Butter
1 Onion, minced
1 Tbsp Garlic, mashed
1 tsp Curry
1 tsp Salt and Black Pepper
1 Goody Chicken Stock Cube
1 cup of Cooking Cream
1 cup of Water
A drop yellow food coloring


1.Mix the marinade ingredients except the flour and marinade the fish for an hour. Take the fish out of the marinade and toss in the flour. Heat the oil in a pan over high heat and fry the fish until it is cooked.
2.To prepare the sauce, heat the oil and butter in a pot over medium heat. Add the onion and stir until it browns, and then add the garlic, spices and yellow food coloring; stir the mixture for a minute. Add the cream and the chicken stock cube; stir the mixture slightly and then add the fried fish pieces; stir in cream and simmer the mixture for 10 minutes. Place in a serving dish and garnish with green coriander and then serve.
