French Croissants

Ingredients

Puff pastry dough:
4 cups flour
1 tsp salt
1 tbsp instant yeast
4 tbsps Velor powder milk
1 tsp baking powder
2 tbsps butter
1 ½ cold water for kneading
1 ½ cold butter
3 tbsps Velor powder milk dissolved in 1 cup of water for greasing

Method

1.In a bowl, strain the flour, salt, yeast, powder milk and baking powder.Add two spoons of butter, adding water gradually then knead the ingredients together until they become coherent.Roll it in nylon paper then refrigerate it to rest for about 20 minutes.

Steps to prepare the dough:

1.Remove the dough from the fridge, place on a floured surface then spread it to form a rectangle until it becomes 1 ½ cm thick.


2.Grease half the amount of butter on 2/3 of the dough.


3.Fold the ungreased part of the dough over the greased part so that it covers half the greased area.


4.Fold the other edge (the greased part) to the end to form a smaller rectangle, press on the edges to seal.


5.Rotate the rectangular dough 90 degrees; spread the dough slightly to expand the size in form of rectangle.


6.Distribute the rest of the butter on the surface of the rectangle, repeat the folding as before. 


7.Press the edges to seal them tightly, cover the dough and leave it to rest for about 15 minutes.


8.Rotate the dough again at 90 degrees, spread it in form of rectangle, fold it in the same way, but without adding any butter.


9.Repeat the process approximately 6 times; refrigerate the dough to rest for 15 minutes between each time.

10.Before the final process of spreading and folding, chill the dough in the fridge for 30 minutes before using it.


11.Remove the dough from the fridge, spread it in form of rectangle with a thickness of 1 cm or until its size is sufficient to cut about 6 to 8 triangles.


12.Roll each triangle by twisting the larger part onto the smaller one, put them in a baking sheet then grease the top of the dough with a little liquid milk.


13.Bake the croissants in a preheated oven at 200o C for 15 minutes then turn on the griddle to fry the croissants.

You can put your artistic touch in the different types of fillings by adding chocolate, jam or cheddar cheese filling.
