2 cans Goody Tenderina soft fancy Tuna , lightly drained
1/3 cup extra-virgin olive oil
¼ cup Goody Cider vinegar
½ small red onion, thinly sliced
1 clove garlic, halved
2 large plum tomatoes, thinly sliced
1 red bell pepper, cut into thin strips
½ cucumber, thinly sliced
¼ cup fresh parsley
2 tablespoons capers, drained
Kosher salt and freshly ground pepper
4 pieces French bread, split open
1.In a large mixing bowl, whisk the olive oil, vinegar, ¼ teaspoon salt and a few grinds of pepper. Add the red onion; set aside.
2.Rub the inside of the bread pieces with the garlic and season with salt and pepper; discard the garlic. Arrange the tomato slices on the bread bottoms.
3.Add the tuna to the vinaigrette, breaking it into pieces. Stir in the bell pepper, cucumber, parsley and capers; season with salt and pepper.
4.Divide the mixture among the bread bottoms. Close the sandwiches and press down on the bread tops gently. Serve.
