Suitable for all courses: appetizer, side or main. Various mayonnaise dips make it more desirable.
680g calamari fresh or frozen, thawed cut in rings
½ cup flour
¼ cup corn starch
½ tsp chili powder
½ tsp salt
½ tsp black pepper
3 tbsp Goody mayonnaise
3 tbsp Goody lite mayonnaise
3 tbsp Goody mayonnaise with chili
Juice of 1 lemon
1 lemon, wedges
Oil for deep frying
1.In a large plastic bag, combine flour, corn starch, chili powder, salt and pepper. Shake to mix.
2.Pat calamari dry. Place in bag and shake to coat. Turn on sieve to rid excess flour.
3.Heat oil. Fry in batches till golden. Place on absorbent paper.
4.Prepare 3 small bowls. Divide lemon juice between 2. Add mayonnaise to one and lite mayonnaise to another. Add black pepper, mix to combine. Place mayonnaise with chili to the third bowl.
5.On serving plate, place dip bowls. arrange cooked rings around. Garnish with lemon wedges.
