Ingredients

Shakshuka:
2 tbsps olive oil
1 medium yellow onion, chopped
1 large red bell pepper, chopped
¼ tsp salt
3 cloves garlic, pressed or minced
2 tbsps Goody marinara tomato sauce 
1 tsp  ground cumin
½ tsp  smoked paprika
¼ tsp  red pepper flakes
1 can Goody crushed tomato
2 tbsps chopped fresh cilantro
Freshly ground black pepper
5 to 6 medium eggs
 

Baked Feta cheese with tomatoes and basil:
½ can of Goody canned tomato 
1 tsp tomato paste
Basil 
1 packet feta cheese (200g)
6 cherry tomatoes
1 tbsp sliced black olives 
1 tbsp olive oil 
1 sprig thyme

Fava beans with Tahini:
2 cloves garlic(minced)
1 tsp cumin
Salt to taste 
2 cans of Goody plain fava beans
3 tbsps tahini
2 to 3 tablespoons lemon juice
 

Method

Shakshuka:
1.    Preheat the oven to 180 c. Warm the oil in a large, oven-safe skillet over medium heat. Once shimmering, add the onion, bell pepper, and salt. Cook, stirring often, until the onions are tender and turning translucent, about 4 to 6 minutes.
2.    Add the garlic, Goody marinara sauce, cumin, paprika and red pepper flakes. Cook, stirring constantly, until nice and fragrant, 1 to 2 minutes. 
3.    Pour in Goody crushed tomatoes with their juices and add the cilantro. Stir, and let the mixture simmer. Reduce the heat as necessary to maintain a gentle simmer, and cook for 5 minutes to give the flavors time to meld.
4.    Turn off the heat. and add salt and pepper as necessary. Use the back of a spoon to make a well near the perimeter and crack the egg directly into it. Gently spoon a bit of the tomato mixture over the whites to help contain the egg. Repeat with the remaining 4 to 5 eggs, depending on how many you can fit. Sprinkle a little salt and pepper over the eggs.
5.    Carefully transfer the skillet to the oven and bake for 8 to 12 minutes.
6.    Top with fresh cilantro leaves, and more red pepper flakes, if desired. Serve in bowls with crusty bread on the side.


Baked Feta cheese with tomatoes and basil:
1.    Heat oven to 200°C / 180°C 
2.    mix Goody canned tomatoes and tomato puree and olive oil. Add basil leaves and stir in. 
3.    Layer the feta, cherry tomatoes, and sliced olives on top of the tomato and basil mixture
4.    . Top with the olive oil and herbs.
5.    Bake for 25 minutes, until the tomatoes have cooked through. Serve immediately. 


Fava beans with Tahini:
1.    Empty fava beans (with liquid) into a medium saucepan and combine with tahini, garlic and cumin. Cook over medium-high heat, stirring frequently, until turns thick, about 5 minutes. Add lemon juice and salt to taste. then serve with toasted pita.
