½ cup Goody vegetable shortening
1 ¼ cup sugar
2 tsp lemon zest
2 tbsp lemon juice
1 tsp vanilla extract
2 cups flour
2 tsp baking powder
½ tsp salt
5 tbsps Velor powder milk
¾ cup water
3 cups frozen strawberries
1 cup sugar
2 drops of lemon juice
1.Lemon Cake:Heat oven to 350F or 180C.
2.Beat together the sugar and shortening. Add eggs one at a time, beating well after each addition. Add lemon juice, lemon zest and vanilla extract and mix well.
3.In a glass, mix Velor powder milk with water.
4.In a separate bowl, mix flour, baking powder, and salt. Add the flour mixture and the milk to the sugar mixture till combined (do not over mix). Pour the batter into a greased loaf pan and bake in the pre-heated oven for 50 to 60 minutes.
5.Berries Syrup:Place the strawberries and sugar in a pan. Cover the lid and leave to thaw for 15 minutes. Cook on low heat till the mixture turns into a syrup. Add lemon drops and continue to cook for about 20 minutes or until the mixture is syrupy and glazy.
6.Final Dish:Pour the syrup on top of the cake or place in a separate bowl and serve.
