450gm small potatoes, peeled and quartered
Kosher salt
1 cup cherry tomatoes
2 tbsps extra-virgin olive oil
2 tbsps Goody light mayonnaise
1 tbsp Goody Cider vinegar
1 head lettuce, leaves separated
2 cans Goody Light Meat Tuna in brine, drained
1 yellow bell pepper, thinly sliced
1 tbsp Goody Green olives, chopped
½ cup chopped fresh basil
Freshly ground pepper


  1. Put the potatoes in a medium pot and cover with water. Add a pinch of salt, cover and bring to a simmer over high heat. Reduce the heat to medium high heat and simmer until just tender, about 5 minutes. Drain and rinse under cold water; transfer to a large bowl. 
  2. To make the dressing: Puree the tomatoes, olive oil, mayonnaise, vinegar and 1 tablespoon water in a blender. 
  3. Divide the lettuce among 4 bowls and drizzle with some of the dressing. Add the tuna, bell pepper, olives and basil to the potatoes; add the remaining dressing and toss gently to coat. Season with salt and pepper, then pile on top of the lettuce
