Ingredients

Liver with Chickpeas:
500gm Liver, cut into small cubes
4 cloves garlic, minced
½ tsp salt
¼ tsp freshly ground pepper
1 tbsps coriander powder
1 tbsps white vinegar
2 tbsps vegetable oil
1 cup Goody Chickpeas, rinsed and drained
¼ cup fresh Coriander Leaves for garnish 
Spicy Liver:
500gm liver, cut into cubes
1 medium onion, diced
4 garlic cloves, minced
1 tsp all-spice
1 tsp salt
¼ tsp freshly ground black pepper
2 tsp Goody Hot Sauce
4 tbsps butter, melted

Method

Liver with Chickpeas: 
1.In a mixing bowl, add the liver, garlic, salt, pepper, coriander powder, and vinegar. Mix well and leave to marinate for 30 minutes. 
2.In a large pan on medium high heat, add the oil, when hot, add the liver, and stir until it changes its color for 5 minutes. Cover and leave to cook for 10 minutes. 
3.Place the cooked liver in the serving dish and top with the chickpeas, garnish with the coriander leaves and serve. 

Spicy Liver:
1.In a medium mixing bowl, add the liver, onions, garlic, all-spice, salt, pepper, hot sauce and mix until well combined. Leave to marinate for 30 minutes. 
2.In a pan over medium high heat, melt the butter, add the liver mix and stir fry for 5 minutes until the liver changes its color. Cover and leave to cook for 10 minutes. Serve.

Liver Fajita:
1.Marinate liver with mustard, cumin, salt, and pepper, tomato juice, onions, garlic, and lime juice. Leave the liver in the marinade for 10 minutes
2.In a pan on high heat, add the oil. Stir fry the liver mix for 5 minutes until it changes its color. Cover and let cook for 10 minutes. 
3.Lastly add coriander and serve.
