1.In a mixing bowl, add the tuna, parsley, green olives, and tomatoes. Top with the olive oil, lemon juice, and salt. Mix all the ingredients until well combined
2.On each tortilla sheet, add couple of arugula leaves top with ¼ quantity of the tuna mix and fold the tortilla sheet to make the wrap. Repeat the same process with the remaining tortilla sheets and tuna mix. Serve.
