Mushroom Omelet

A marvelous breakfast dish to which friends are worth inviting. Serve with French baguette to double the pleasure of eating it.

4 tbsp butter
½  cup green onion, chopped
½ can Goody mushrooms, sliced
1 red bell pepper, sliced
8 eggs
½  tsp salt
½  tsp white pepper
3 tbsp Velor powder milk, dissolved in ½  cup water
1 cup cheddar cheese


  1. In a pan, melt 2 tbsp butter. Sauté green onion. Add mushroom and bell pepper, stir till soften. Take off heat and place on a plate.
  2. In a bowl, beat eggs ,seasoning and milk. Set aside.
  3. In the same pan, melt 2 tbsp butter. Pour half of the eggs, swirling the pan to cover base. Cook till surface is set. Place half vegetables mix over one side of the eggs and sprinkle with half amount of cheese. Flip the other side over and press till cheese melts.
  4. On a serving plate, place omelet and sprinkle with green onion. Repeat with remaining ingredients. Serve immediately.
