1 pack Goody Vermicelli nest No. 60
2 medium carrots, grated
3 spring onions, chopped
1 cup fresh coriander, chopped
3 cups lettuce, thinly sliced
Roasted sesame seeds / Goody roasted peanuts
1 tbsp Goody pure honey
1 tbsp Goody natural sugar cane vinegar
1 tsp Goody mustard
1 tbsp mild soy sauce
Dash of salt and pepper
Rind and juice of 1 lemon
1. Cook vermicelli nests according to pack instructions. Cool.
2. In a bowl, mix carrots, spring onions, coriander and lettuce.
3. In a serving plate, arrange nests, fill with salad mixture and garnish with roasted nuts.
4. In a jar, mix dressing ingredients. Seal well. Shake. Pour on salad.
Cook Tip: salad nests can be served in red cabbage shells.
