1 canned Goody light Meat Tuna in Olive Oil
¼ cup Goody Orzo, Boiled according to the instructions on the package
2 Scallions, thinly sliced
1 tsp roasted red peppers, drained and roughly chopped
¼ cup flat leaf parsley, chopped
1 tsp lemon zest
¼ cup lemon juice
2 tbsps cup olive oil
1 tsp minced garlic
½ tsp salt
¼ tsp black paper
1.Orzo Tuna Salad: in a large mixing bowl, put all ingredients and mix them. Set aside.
2.Dressing: combine the ingredients for the dressing a small mason jar. Give it a few good shakes until the dressing mixes together. Toss salad with dressing before serving.
Note: Leftover salad can be refrigerated in an airtight container for up to 3 days.
