For the pancakes:
1 2/3 cups all-purpose flour
¼ cup cornstarch
¼ cup confectioners' sugar
1 tbsp baking powder
¼  tsp baking soda
½  tsp kosher salt
3 tbsp Velor Milk dissolved in 1 ¼ cup water
3 tbsp melted butter
2 large eggs
1/2  tsp vanilla extract
Goody Pancake Syrup for Serving

For the Waffles:
2 cups all-purpose flour
¼ cup sugar 
1 tbsp baking powder 
½  tsp salt 
3 tbsp Velor Milk dissolved in 1 ¼ cup water
1 tbsp plus 1 tsp vanilla extract 
2 large eggs, separated, plus 2 additional egg whites
1 stick (8 tablespoons) salted butter, melted, plus softened butter, for serving
Goody Peanut Butter with Chocolate 


1.baking soda and salt together in a large bowl. Whisk the milk, butter, eggs and vanilla together in a medium bowl. Add the milk mixture to the flour mixture and whisk until they form a thick batter. Let the batter rest for 5 minutes. 
2.Heat a large nonstick skillet or griddle over medium heat. Ladle a heaping 1/2 cup of the batter into the skillet. Cook until bubbles break the surface of the pancake, and the underside is golden brown, about 1 minute. Flip the pancake and cook until lightly golden and cooked through, about 45 seconds more. Repeat with the remaining batter to make 5 more pancakes. Serve as a stack and drizzle over the pancake syrup.
3.For the waffles: Preheat the waffle iron to the regular setting.
4.Sift together the flour, sugar, baking powder and salt in a bowl. In a separate bowl, whisk together the milk, vanilla and 2 egg yolks. Pour over the dry ingredients and very gently stir until halfway combined. Pour in the melted butter and continue mixing very gently until combined.
5.In a separate bowl using a whisk (or a mixer), beat the 4 egg whites until stiff. Slowly fold them into the batter, stopping short of mixing them all the way through.
6.Scoop the batter into your waffle iron in batches and cook according to its directions. Serve immediately with softened chocolate Peanut Butter.
