1½ cups all-purpose flour
3 tbsps sugar
1 tbsp baking powder
¼ tsp salt
1/8 tsp freshly ground nutmeg
2 large eggs, at room temperature
5 tbsps Velor Milk dissolved in 1¼ cups water, at room temperature
½ tsp pure vanilla extract
3 tbsps unsalted butter, plus more as needed
½ cup Goody Fruit Cocktail, drained and cut into bite-sized bits
Goody Pancake Syrup for serving
1.In a large bowl, mix the dry ingredients: the flour, sugar, baking powder, salt, and nutmeg.
2.In another bowl, beat the eggs and then whisk in the milk and vanilla.
3.In a large pan over medium heat, melt the butter. Whisk the butter into the milk mixture. Add the wet ingredients to the dry mixture, and whisk until a thick batter is just formed.
4.Keeping the pan over medium heat, ladle about ¼ cup of the batter, making 1 pancake at a time. Cook for 2 minutes until bubbles break the surface about 2 minutes. Scatter the surface with the fruit cocktail. Flip with a spatula and cook about 1 minute more on the second side. Transfer to a platter and cover loosely with foil to keep warm. Repeat with the remaining batter, adding more butter to the skillet as needed. Pour the Pancakes syrup as desired and Serve.
