1 ½ cups softened confectioners' sugar
1 cup Natural Peanut Butter Regular
1 cup Goody Date Spread
5 tbps unsalted butter, melted
½ tsp vanilla extract
¼ tsp kosher salt
1 cup desiccated coconut for garnish
1.In an electric mixer, beat the confectioners' sugar, peanut butter, date spread, melted butter, vanilla extract and salt until well combined.
2.Roll rounded teaspoons of the mixture into round balls and place on a parchment-lined baking sheet.
3.Roll the peanut butter balls the coconut. Chill until firm, about 20 minutes. Best served very chilled
