Pamper your family with penne slices mixed with many delicious ingredients and covered with grated cheddar cheese.
1 pack of Goody penne
½ green pepper, thinly sliced
3 cloves garlic, crushed
2 spring onions, chopped
50 g sundried tomatoes, thinly sliced
50 g parmesan cheese, grated
100 g extra grated cheddar cheese for the topping
8 eggs, whisked
1.Preheat the oven to 180oC. Grease a 25 cm pie or cake tin, set aside and line with parchment.
2.Cook the penne till al dente according to the packet instructions. Drain and set aside.
3.In a large bowl, mix together all the ingredients until they become well incorporated. Place in the tin and press down gently. Top with a good handful of extra cheddar cheese. Bake in the oven for about 40 minutes until the top has browned and the frittata is cooked through. Cut into slices and serve.
