½1 cups flour 
¼ cup sugar 
1 tsp cinnamon 
¼ tsp salt 
½ tsp paprika 
½ cup butter, cubed 
1 egg yolk 
3 tbsp ice water 
1500g pumpkin pieces with skin 
1 can Velor sweetened condensed milk 
3 tbsp flour 
½ tsp cinnamon 
½ tsp ginger 
½ tsp vanilla 
2 eggs 
3 tbsp brown sugar 
 4 tbsp flour 
2 tbsp butter 
3 tbsp brown sugar 
¾ cup walnut, chopped


1.Remove pumpkin seeds. Place skin side down on oven tray. Cover in foil. Bake in moderate oven for about ½1 hours. 
2.Use kitchen towel to dry excess water from pumpkin. Spoon flesh in a plate. Cool. 
3.For pastry: in a food processor, combine flour, sugar, cinnamon, paprika and salt. Blitz twice. Add butter, blitz till sandy. Add egg yolk and water, mix till gets together in a ball. Cover, rest for few minutes. 
4.Roll pastry on lightly floured surface. Cover base and sides of pie dish. Cut excess pastry. Refrigerate. 
5.For filling: in a bowl, beat ingredients to mix well. Pour over pastry. Bake in high oven for 15 minutes. 
6.For topping: in a small bowl, mix flour and brown sugar. Using a fork, cut in butter till sandy. Add nuts, mix. 
7.Remove pie from oven, sprinkle topping to cover surface. Reduce oven heat to moderate. Bake for 45 minute. Cool before serving.
