2 tbsps extra virgin olive oil
1 onion, chopped
4 cloves of garlic, chopped
140 grams of carrot, chopped
2 sprigs fresh cilantro, chopped
100 grams green bell pepper, chopped
100 grams red bell pepper, chopped
2 cans Goody Red Kidney beans, drained and rinsed
360grams tomato, chopped
1 jar Goody sieved tomatoes
2 tsp ground cumin
1/8 tsp cayenne powder
Salt and black pepper to taste
2 cups vegetable stock
Tortilla chips for serving


1.    In a non-stick frying pan, heat the olive oil on medium high heat. Add chopped onion and garlic and cook until golden brown. Add the diced carrots, cilantro, green pepper, red pepper, and sauté for 5 minutes. Add the red kidney beans and stir, then add the tomatoes. Add the tomato sauce, cumin, cayenne powder, salt and pepper and cook for about 5 minutes. Add the vegetable broth. Cook over medium heat for 30 minutes or until sauce thickens.

2.    Serve with tortilla chips.
