1 Large Chicken
¼ cup white vinegar
1 tbsp Goody Shortening
1tbsp onion powder
½ tbsp ginger powder
½ tbsp dried thyme
¼ tbsp paprika
1 tbsp salt
½ ttbsp ground black pepper
1 cup Goody Pitted Green Olives, drained
250gm small onions, skin off
4 Rosemary Sprigs


1.Cover the chicken with the white vinegar. Rinse the chicken inside and out. Pat the outside dry
2.For the marinade, in a small mixing bowl, add the shortening, onion powder, ginger powder, thyme, paprika, salt and pepper and mix. Cover the chicken with the marinade and leave for at least one hour for the seasoned chicken to rest in the refrigerator, uncovered, before it's time to cook. Longer is even better, up to 24 hours. The result is noticeably crispier skin.
3.Preheat the oven to 200 degrees C.
4.In a baking dish place the olives and onions, and Rosemary sprigs and top with the chicken. Cover with aluminum foil and place in the oven for 1 hour until chicken is cooked. Remove the aluminum and turn on the broiler until the chicken is golden brown. Remove from the oven and serve.
