1 bunch of rocket leaves
3 dried tomatoes or cherry tomatoes
2 pieces of red radish, sliced
½ onion, sliced thinly
½ cup of balsamic vinegar
1 tbsp of Goody Date Spread
1 tbsp of olive oil
1 tbsp of lemon juice
1 spoon of grated parmesan cheese
2 tbsp of roasted pine nuts
1 spoon of pomegranate
1.Wash and dry the rocket leaves and cut them into large pieces, then place them in the salad platter, then stir in the tomatoes, the radish and the onions (as desired).
2.In a small bowl, mix the balsamic vinegar with the date spread, the olive oil and the lemon juice, then add the mixture to the salad when serving.
3.Decorate the platter with the pine nuts, the pomegranate and the cheese.
