Shrimp and Spinach Sauce Fettuccine

1/3 cup of butter
1 medium onion, minced
1 garlic clove, mashed
3 bunches of spinach
4 cups of whipping cream
Salt and pepper to taste
3 green onions, minced
½ kilo shrimps, keeping the tails
2 tbsps oil
½ package of Goody fettuccine pasta
2 tbsps parmesan cheese
- Heat butter in a pan, stir the onions and garlic until they wilt then add spinach and stir it well, remove the pan from the heat and leave it to cool.Grind the spinach mixture after it cools using a Kenwood hand blender and set aside.
- In the same pan, add the cream and simmer. Afterwards, stir in the spinach mixture, salt, pepper and green onions; leave them on the heat for 5 minutes.
- In another pan, fry the shrimps with a little oil for 3 minutes then add them to the cream and spinach mixture.
- Boil the fettuccine as shown on the package, put in the serving dish then pour the spinach sauce over it and garnish with parmesan cheese.
