The key to making the perfect quiche is simplicity! This recipe is a good solution to any meal dilemma from dinner parties, suppers, picnics and even afternoon tea.
12 slices of toast
Olive oil for brushing
1 small onion, finely chopped
1 tbsp butter
1 tsp olive oil
1 ¼ cup broccoli, cut into small florets
1-2 garlic cloves, minced
Salt-Black pepper-Italian herbs to taste
½ cup water
¾ cup mozzarella cheese
¾ cup cheddar cheese
2 egg yolks
3 tbsp Goody Velor Milk Powder
1 can Goody Velor Cream
¼ cup water
Salt- Italian Herbs to taste
1.Preheat oven to 325°F (150°C).
2.Brush a cupcake baking pan with olive oil.
3.In a pan, melt the butter and olive oil. Then add the onions and sauté on low heat until onions are translucent and begin to get a golden color. Add broccoli and keep cooking on low heat. Add the garlic, salt and spices. Then add water and leave to simmer until broccoli is cooked and all water evaporates. Then set aside.
4.Cut the toast crusts. Flatten toast slices with a rolling pin then brush with olive oil. Place toast in the greased cupcake pans. Fill each toast cup with the broccoli mix. Then mix the 2 types of cheese and sprinkle on top of the broccoli cups.
5.Place the last 5 ingredients in a mixer. Mix and place on top of the cheese on the toast cups.
6.Bake in oven for 20-25 minutes or until golden. Remove cups from baking pan and arrange in serving dish. Serve hot.
