1 egg yolk
1 tbsp caster sugar
1 tsp powdered vanilla
250g mascarpone cheese
175ml Cofique Instant Coffee Gold
12 Lady Finger biscuits
250gm Strawberry, cut into half
1-2 tablespoon unsweetened cocoa powder
1.In a mixing bowl; put the egg, sugar and powdered vanilla and mix gently to a creamy consistency. Add the mascarpone and fold in to obtain a cream.
2.Put the coffee in a bowl, dip the biscuits for a second or two in the coffee mixture, letting them absorb just enough to keep firm but not falling apart.
3.In 4 individual small serving bowls, start with biscuits, alternating layers of biscuit mascarpone, and strawberries.
4.Dust with cocoa powder on top and garnish with the strawberries and put into the fridge to set and chill. Serve
